The chemical composition of ice cream differs mainly with regard to the fat content, an-d three grades of ice cream can usually be found in most market areas.
1. Stan-dard - Meets minimum stan-dards. The grade just meets the minimum fat content, often has an overrun that approaches the maximum allowed by law, an-d usually contains relatively inexpensive flavor ingredients.
2. Super Premium - Has less than 50% over-run, super high fat content, an-d the best available ingredients.
3. Premium - Low over-run, higher than stan-dard fat content, an-d good ingredients. It is the type that has dominated the market for many years.
Newer developments have introduced a fourth grade referred to as super premium ice cream that is c-haracterized by higher fat contents an-d lower overruns than premium varieties. Cost of the product is directly proportional to the grade of the ice cream.
