Strange ice cream around the world-Horseradish Ice Cream
Do you know horseradish? Horseradish is a perennial plant of the Brassicaceae family. The intact horseradish root has hardly any aroma. When cut or grated, however, enzymes from the now-broken plant cells break down sinigrin (a glucosinolate) to produce allyl isothiocyanate (mustard oil), which irritates the mucous membranes of the sinuses a-nd eyes.
Perhaps you have tasted horseradish, but, have you ever tasted horseradish ice cream? Since opening Max a-nd Mina s in Queens, New York in 1998, brothers/owners Bruce a-nd Mark Becker have created more than 5,000 one-of-a-kind ice cream flavors, many of them adapted from their gra-ndfather s original recipes. Daily flavor experimentations mean that the menu is ever-changing, but Horseradish, Garlic, Pizza, Corn on the Cob, Lox a-nd Jalapeño have all made the lineup.
Next time, when you make ice cream with your ice cream machine at home, maybe you can have a try.
